Well it finally looks like winter in Illinois. This is going to make my outfit pictures a little more challenging. Like the next picture - I cut off part of my head. I was in a hurry - it was really cold.
And here's a perfect recipe for a snowy, winter day:
Let me start this part by saying I am so far from a professional photographer - especially when it comes to taking pictures of food. I have a nice camera, I just need to learn how to use it! I promise you that this tasted delicious, although my pictures may lead you to believe differently. It is easy, cheap and probably pretty healthy. I made it in about 10 minutes the other morning before leaving for work.
Chicken Chili
2 lbs shredded chicken
(I actually used turkey this time. I had it in the freezer - which makes the recipe even easier!)
48 oz. northern white beans (drained)
16 oz. thick and chunky salsa
8 oz. shredded cheese (taco/cheddar, any kind you like)
2 cans swanson chicken broth
1 can corn
1 tbsp cumin
1 tbsp chili powder

Put it all in the crock pot and stir.
I leave it on low all day while I'm at work and just turn it to warm when I get home. It probably wouldn't need more than 2 hours in there if you wanted.
I usually make corn bread to go with it.
It is SO easy and a perfect winter meal!
Isn't the crock pot the best??
